Breakfast

We like to eat frozen fruits and raw honey with our breakfast

Pancakes:

2 Cups whole white wheat flour
1 tsp baking soda
1/2 tsp salt
1/4 Cup sugar (brown or raw cane)
tsp vanilla
2 eggs (free range)
2 Tab oil
1 1/2 Cup - 2 Cup raw milk
We cook them on a cast iron griddle on our stove at heat 3.
We used a recipe from Better Homes and Gardens for pancakes.  We used half whole wheat and half oat flour.  Then after he poured the batter on the griddle he dropped bananas into the mix.  When he flipped them over they carmelized beautifully. These with a little maple syrup or raspberry jam are amazing.  Carmelized bananas!

Grandpa's Whole Wheat Waffles 1/3 recipe

Coming as soon as Brian gives me directions.  Only he and my dad have been able to make this recipe to my satisfaction.  Even if you don't make it perfectly it is still delicious!
(We rehydrated some freeze dried applesauce to put on our waffles.)

Grandpa Cropper's Whole Wheat Waffles:
step 1

1 1/3-1 2/3 C whole heat flour
2 tsp baking Soda
1/2 tsp salt
1 1/3 C dry milk (sifted)
2 Tab and 2 tsp sugar
(optional 1 tsp cinn. & 1/8 tsp nutmeg)
(Some of the additions we like in the recipe are pecans, cashews, coconut flakes, hazelnuts, almonds, and sunflower seeds.)

Stir together and pour in 2/3 cup water.  Let sit.

Pour in the water and let it sit!  Necessary!  Let that water sit while you whip the egg whites.  
If you miss this step you'll regret it.


step 2 eggs:
Separate 2 eggs
whip separately

Carefully separate egg whites and yolks into separate bowls.  Do not get even a drop of egg yolk in the whites.  If you do fish it out, its worth worth the extra work.

Combine yolks with:
2/3 C water
2-3 T oil

(when we don't have dry milk we combine with milk instead as pictured above)

This is what it looks like after you've beaten the egg yolks.

Combine wet and dry ingredients.  
Ad 1/3 cup flour

When you whip the egg-whites you cannot have even a drop of egg yolk.  Not a drop!  Whip them until they make stiff peaks when the beaters come out.  (as pictured above.)

Pour (more like drop) the egg whites onto the completely prepared waffle batter.  

Very gently fold the egg whites into the mixture, leaving pleanty of white fluffy egg lumps, and only mix until barely combined.

Using a 1/3 cup measure scoop and drop waffle mixture onto the hot waffle iron.

If you put more flour you are going to have tougher waffles.  If it is more runny you will have softer waffles.  I prefer something in between with a slightly crisp outside and a light rich center.

Muffin Cake



8X8 pan     400 degrees F       25-30 minutes

1 Cup     Whole ground soft white wheat flour
1/2 Cup  Old-fashioned oats
1/4 Cup  Raw Cane sugar
1 tsp       Baking Soda
1/2 tsp    Cream of Tarter
1 tsp       Grated orange peel
1/2 tsp    Iodized Sea Salt
1/4 tsp    Ground cinnamon
3/4 Cup  Dried Cranberries

whisk together

1/2 Cup Plain yogurt
1/2 Cup Milk
2 Tab     Canola/Olive oil mix
1            Egg (beaten)
1/2 tsp    vanilla extract


Make a well in the dried ingredients and pour the wet ingredients into it.  Gently stir the ingredients until they are just barely moist.  Pour into the oiled 8X8 pan.  Set aside to put topping on.

Streusel (we use this on special occasions)
1/2 C     Old-fashioned oats
3 Tab    Raw cane sugar
1 tsp      Molasses
2 Tab    Olive/Canola Oil mix
1/2 tsp   Ground Cinnamon

Wisk together and sprinkle it semi-evenly on top of the muffin batter.
Bake for 25-30 min.

We love to eat this warm.  Sometimes we have leftovers to cool down.  :)

(If you don't have orange peel add 1 tsp lemon juice after you've poured the wet ingredients into the well.  Then mix it into the batter.  This will give the chemical reaction the short amount of time it wants.)

We have made this with applesauce, bananas, dried cranberries, and dried blueberries.  If you make it in a pan (instead of muffin cups) the topping tends to sink into the cake.  That makes it have a topping and a center.

If you do want to make it into muffins simply put it in the oven for 15 to 20 minutes at 400 F.
